Bottling dosage: a product that is added to natural cider to prompt a second fermentation, made up of dry yeast or yeast in suspension, sucrose or fresh apple must or concentrated apple must and natural cider. The sucrose is added in the quantity that is strictly necessary to prompt the second fermentation and the addition of a bottling dosage must not increase the cider’s starting total alcohol strength by volume by more than 1.5 % vol.
