This is the term used to refer to various rating seal for products from sustainable forestry, etc.

I'm deliberately ignoring the "Umwelt" part here, because for sustainable forestry products there are only two systems in use that I am aware of - FSC and PEFC. It's all about "saving" the environment through sustainable practices and avoiding the "R&P" of virgin forests. However, there are various "environmental seals of approval" (e.g. Green Label +PLUS environmental seal of approval, etc.), so you could mention that if you really feel the need to. There are probably a few score of the things that we could dig up with a bit of research.

This would then be the "Nachhaltigkeitssiegel", but what about the "Umwelsiegel", like our "blue angel", is this summarized as well under sustainability seal or is there an extra term like environmental seal or the like?

Yes, that does appear to be a much more common phrasing for the FSC seal & the like
