Two entries on a French pay stub. They deal with a pension system, I'm assuming it's a kind of restricted vs. unrestricted pension but I can't find anything to officially confirm/disprove my hunch. Any and all help will be much appreciated...

I think you are on the right track. plafonnée est un chiffre maximum ici et non plafonnée est non limitée. Un plafond est la somme maximum que l'on peut avoir. Par exemple dans la fonction publique il ya différents échelons et salaires plafonnés=fixés

vieillesse - is a contribution to some sort of retirement fund, probably the State scheme.
plafonnée means that one of the deductions applied on salaries is a contribution to pensions that has a cap or ceiling on it.
Déplafonnée means that the particular contribution is not capped.
For example, one some pay slips in France, you pay contributions under "Tranche A" which are a given percentage of your salary up to the sum of XXX euros per month. If you earn more than this, the bit above the line will not be subjed=ct to that aprticular deduction. You then also pay deductions on "Tranche B". This is usually a further % of your salary, this time on teh whole amount, whatever the sum your earn.

plafonnée = maximum amount/limited
déplafonnée = unlimited

vieillesse = retirement contributions

One is limited (maximum amount), while the other one is not.
