I am thinking there must be some synonym in addition to your own suggestion, but can't find it right now. But here's the use of 'zaging'. We use "key cutting".

Deze tweede set sleutels mag pas in omloop
gebracht worden bij verlies of diefstal van een
sleutel uit de 1e set. Wanneer een sleutel van
de 2e set in de cilinder wordt gebracht, en volledig
wordt omgedraaid past de cilinder zich
automatisch aan de nieuwe zaging van de 2e set
sleutels aan. Sleutels van de 1e set worden hierdoor
totaal onbruikbaar!

That's right, Michael. When you have a key cut in a store, the profile is "a given" of the keys. You select the right key/profile before you cut the key.

| My client just got back to me and according to him 'sleutelzaging' is 'key cutting', as you already mentioned in your answer. He also went on to say that a 'key cutting' and a 'profile' have a different meaning; 'key cutting' (on a normal key) is located at the bottom, whereas a 'key profile' is the grooves located on the side of the key. |

That's why I am not so sure about 'key cut profile' as the correct English translation for 'sleutelzaging'.
