This is on a fancy menu for a fashion launch, "Suprême de poulette au foie gras poêlé en cocotte cristalline", which I've translated as "Supreme of baby chicken with pan-fried foie gras in a glass casserole", seeing it as possibly being served in individual glass casseroles, but I'm thinking it may have a different meaning, some fancy serving technique maybe???

Not really a translation but a possible explanation of cristalline.
célèbres cristallines (très fines lamelles de fruits ou de légumes, cristallisées et cassantes comme du verre, concentré de goût et régal pour les yeux) qui craquent autour d’un sorbet ou d’une mousse ;

I think your translation is fine and I don't believe there's any hidden meaning here. Whether it's an individual casserole or a big one is not obvious from the given context - unless there is something else which leads you to think it's a small one, then I think it would be over-translation.
