farbigen Bevoelkerung (der USA)

Hier geht es nicht nur darum, niemanden zu beleidigen, sondern auch darum, den richtigen Ausdruck zu finden

Assuming that your German authors didn't themselves carry out research in the USA, it seems likely that they will be referring to US studies. In which case perhaps you (or they) can track this back to the studies they're citing?

It was written by German professors and is a scientific publication. The text describes how lifestyle and nutritional habits affect the cancer incidence rates. "Farbig" definitely includes the Asian population here, I have not come across any references for Latinos yet

My God, was this written by a South Äfrican? What's this for and what's the readership? "Farbig" could be Asian/Latino etc. BUT what about mixed-race people?

latino-American? In our age of "political correctness" I would imagine this covers people from Mexico. However, People from Asia then would have to be called Asian-American and it gets really tedious that way

Other ethnic groups

Being as black and white (African American and Caucasian - whatever tickles your fancy) are already two separate categories, I would go with "other ethnic groups" here.
