A description of a 3x3 field matrix test.
I don't understand the whole phrase marked with asterisks, but the Aufgabenstamm has me particularly stumped.
Thanks!

question stem
The straightforward equivalent seems to exist in English:
"Multiple choice items consist of a stem and a set of options. The stem is the beginning part of the item that presents the item as a problem to be solved, a question asked of the respondent, or an incomplete statement to be completed, as well as any other relevant information. The options are the possible answers that the examiner can choose from, with the correct answer called the key and the incorrect answers called distractors."

And the phrase in asterisks means (as I understand it), that you don't get any clues from the wording or format of the 'question stem' that would allow to guess or infer the answer with better success rate than the mere statistical probability of getting it right by chance.

Discussion
What is a matrix test? Does one have to dodge bullets?
The solution/answer cannot be arrived at by guessing or by comparing task format or answer sequence, allowing XXX....
I can imagine it
besteht. In der Beispielaufgabe „Verdauung“ besteht dieser aus
einem Text und einem realistischen Bild (Abb. 2). Dieser Aufgabenstamm
enthält das gesamte Fachwissen, das zur Lösung notwendig ist. Zu jedem Aufgabenstamm gehören mehrere Items.
And this: Sie
enthielten jeweils einen Aufgabenstamm
mit Frage und die vier Antwortmöglichkeiten.
Grafiken oder andere Bildinformationen
wurden nicht gegeben, so dass
die Aufgaben hinsichtlich formaler Merkmale
als weitgehend konstant betrachtet
werden können.
Um die hier im Fokus stehenden Forschungsfragen
beantworten zu können,
wurden die Testaufgaben außerdem so
konstruiert, dass sie entweder biologische
Fachbegriffe oder Alltagsbegriffe enthielten.
Diese Integration konnte sich sowohl
auf den Aufgabenstamm als auch auf die
Antwortalternativen beziehen (vgl. Tabelle
1).
As I understand it, it is a task format.
Aufgabenstamm als Frage: Alternativen als Antworten auf die Frage.
Aufgabenstamm als unvollständiger Satz, der durch jede Alternative vervollständigt wird."
Call me dumb if you want, but please don't call me lazy, because I ain't.
You could possibly translate it as "question", even though it may not have a question mark at the end - it could also be a sentence with a word missing.
Raten means guessing, though I'm not sure about the rest of the text in asterisks.
