or perhaps 'individualized store identification'. In malls, 'Knotenpunkte' are called 'anchor points' , usually around the largest stores or 'anchor tenants'.

'Landmark creation' is another, but a bit presumptious.

location profiling; address profiling?

I'm not 100% satisfied with this answer but maybe it will help others to come up with ideas.

Aren´t they talking about establishing the shopping mall as a known or "in" location? Recognition of the location as a sort of brand (e.g. Potsdamer Platz Arkaden)?

Address creation

It seems to me that the concept is the division of the mall into sub-units on a human scale by the creation, within the larger structure of the mall itself, of distinctive "addresses" - locations, points of reference (also squares, and other divisions of space) thereby avoiding avoid inhuman, impersonal "mega-spaces".

agree Marnen Laibow-Koser : "Gliederung" is the key word here for understanding this, I believe. The closest English term would be something like "breakdown", and so Mike's interpretation makes great sense.
