Zeleninu nakrájíme na velmi tenké a dlouhé plátky, blanšírujeme v horké slané vodě a po té vhodíme do ledové vody.

I know it is something like shortly boil, but I need an exact culinary term.

Note on parboiling Note to Anton - 'parboiling' is slightly different - that is done when softening vegetables, e.g potatoes, prior to their further preparation (mainly roasting) - blanching is done very quickly so that things like cabbage still keep their 'crunch' :)
