Dans un contrat de mariage, une clause mentione que le futur époux pourra faire des investissements au nom de la future épouse mais que si elle décède avant lui :

Nothing wrong with the most literal translation, more a problem of analysing the sentence the right way.
Although this version is far more easier to understand:
ou bien ceux [= les investissements] qui se sont substitués à l'investissement d'origine
the investment thus made = "thus made" => made in the name of the spouse
or
those then representing them = investments that are NOT the initial investment but are financed by the same funds i.e. whatever form this initial investment will have "then" [=at the time when the spouse has deceased], i.e. whichever else it was reinvested in after the initial/previous investments have been sold / liquidated / exchanged.

the "investment" could have been done by buying a property A - later that property could have been sold and the proceeds reinvested in a say properties B and C. In that case the properties B and C would "represent" the initial investment in the property A - it's all coming from the same funds.
